No Oil Cooking: Chilly dry fried pork

 Hey Guys! I am back with another pork recipe, but this time I’ll show you guys how to make chilly dry fried  pork without using even a bit of oil.
Growing up in the north-east part of India, I have always loved the way they would prepare their food …so yummy and healthy. Most of the north east dishes are either quickly boiled or simply stewed, and trust me the food there taste heavenly! So today’s food post is purely inspired from the north east India, and I hope you guys like it. 🙂

Let’s get started!
To make this all you’ll need is few simple kitchen ingredients.
Chilly dry fried pork
You’ll Need:
  • Half kg pork
  • Chilly powder
  • turmeric powder
  • Dark soy sauce
  • Green chillies
  • Tomatoes
  • Ginger garlic paste
  • Salt to taste
  • Potatoes (optional)

Preparation: Wash the meat  and keep the meat with most fat in one bowl. Chop 2 medium tomatoes, cut few green chilly as per you can handle, crush 6 clove of small size garlic with 1 inch ginger.
Direction : Heat the pan in medium flame. Once it is hot, take the bowl that has the meat with large fat and place it on the pan . Make a bedding of second layer with the remaining meat by adding it on top. Make sure the once with more fat is in the bottom. Sprinkle a bit of salt and turmeric powder and wait until the fat starts to crackle. Once you hear the crackling sound , stir the meat and keep the gas in low flame . Leave it for 15 mins and then check if the meat has turned brownish red. Next add green chilly, tomatoes, ginger garlic paste, chilly powder and some dark soy sauce. Place the ingredients on top of each other, do  not stir. Put the lid of the vessel and leave it for 10 minutes. You can see the tomatoes turning soft and mushy, that’s when you stir. Give it a good mix, check the salt proportion and leave it for another 10 – 15 minutes. You can off the gas or induction after that. Serve the meat after 10 – 15 minutes of preparation.

Wondering when to add the potatoes?
I got you! If you like to add potatoes to this chilly pork, then add freshly chopped medium size potatoes right after you give all the ingredients a good mix. And then, add the raw potatoes on top of the meat and leave it for the final 15 minutes .
